SUMMARY: To provide leadership and direction to Tradewinds and Prime Thyme staff and oversee operations. Responsible for a high level of guest service as described in your departments guest service standards


  • Establish performance standards which define exceptional guest service
  • Develop policies, procedures and reports designed to achieve revenue and profit goals
  • Hire, coach and develop staff and direct daily work activities and ensure conformance to standards
  • Collaborate with Director to develop annual budget, and maintain controls on financial operation for the Tradewinds department.
  • Review and revise menus to reflect sales growth and seasonal trends while meeting established financial guidelines
  • Complete all administrative paperwork in a thorough and timely manner
  • Establish and exceed standards of food quality and cleanliness for front and back of house operations


Knowledge and Certification


  • High School Diploma/GED or equivalent experience
  • 4 year degree in Hospitality or related field; or 5 years management experience in a high-volume buffet; or equivalent combination of education and experience

Skills Required:

  •  Accurate and detail-oriented
  • Highly organized and ability to adapt quickly to changing priorities
  • Excellent written, verbal and interpersonal communication skills  


  •  Strong computer skills Microsoft Office (Word, Excel and Outlook) and Windows XP
